Batter:

1 cup sugar
1 egg
1 Tablespoon apricot jam
1 cup flour
1 teaspoon bicarbonate of soda
generous pinch salt
1 Tablespoon butter
1 teaspoon vinegar
1 cup milk

Sauce:

1 cup cream
4 oz (125g) butter
1 cup sugar
1/2 (half) cup hot water

Now the magic

Beat the egg and sugar in a mixer. Add jam. Sift the flour, bicarb and salt. Now you melt the butter and add vinegar. Add liquids to egg mix. Mix it well and bake in a covered dish. Temperature must be 180 degrees for 45 minutes to an hour.

Melt together all the ingredients for the sauce. Pour over the pudding when you take it out of the oven.
